Fresh Apple Cake

With walnuts & fresh apple, this moist cake bakes in a tube pan.

Actually, I don't have a small tube pan. I didn't want to make a big one either. So I used the glass pan I have for cooking bread.

The original recipe is from Sunset Complete Vegetarian Cookbook. I made my low-fat high-fiber version of it... and half of the recipe!

Ingredients:
  • 1 1/2 cup whole wheat flour
  • 1/2 cup brown sugar
  • 1/2 tsp baking soda
  • 1/2 cup chopped walnuts
  • 1 egg (I used egg substitute)
  • 1/3 light butter melted
  • 1tbsp lemon juice
  • 1tbsp vanilla
  • 1 big green apple (I used a golden delicious I have at home)
Preheat oven 350F.

Combine flour, sugar, baking soda, and walnuts in a medium bowl. Mix well.

Combine egg, butter, lemon juice, and vanilla in another medium bowl. Beat until blended. Stir in apple.

Add apple mixture to flour mixture, stirring until evenly moistened.

Spread batter in a greased, lightly floured loaf pan.

Bake until cake begins to pull away from sides of pan and feels firm when touched in the center. Depending on your oven, it could take 45-60 minutes.

Let cool in rack for about 10-15 minutes. Serve warm or at room temperature.
