Eggplant & mozzarella panini

Oh, eggplants! I love them but don't know well how to cook them.

This sandwich is easy. It will take only 25-30 minutes total to finish it.

You need:
  •  1 eggplant sliced 1/4 inch thick
  • 2 tbsp olive oil
  • 2 rolls ciabatta
  • 4-6 slices fresh mozzarella
  • sun-dried tomato spread (I combined a bit of mayonnaise & sun-dried tomato pesto)
Heat a grill pan on the stove. Brush the eggplant slices with 1 tbsp olive oil and season lightly with pepper.

Grill until marked and just soft (around 10 minutes) turning the slices once.

Cut the bread lengthwise. Cover one side of each sandwich with tomato spread. Divided the grilled eggplant between sandwiches, add cheese and top with the other slice of bread.

Brush sandwiches with olive oil and grill until cheese is melting and bread is just crisp (4-5 minutes).

Makes: 2 sandwiches
